Lo mein
Easy to make + deeply satisfying. Make this for lunch or dinner & it won’t disappoint!
Serves: 4-6 people.
Ingredients:
For lo mein sauce:
- 1/2 cup tamari/soy sauce (I use this brand)
- 1/2 cup maple syrup
- 1” ginger, peeled &. minced
- 2-3 garlic cloves, minced
- 1-2 tbsp seasoned rice vinegar
- 2-3 tbsp toasted sesame oil
For remainder of dish:
- 1/2 onion, diced
- 2-3 cups chopped veggies of choice (My recommendations: carrots, celery, purple cabbage, bok choy, bell pepper, mushrooms, kale, or the like)
- 6-8 brown rice ramen noodle patties (I use this brand—for accurate measurements)
- sesame seeds, to top
- sriracha (optional, I LOVE this brand on top of finished dish)
directions:
- Prepare the sauce by whisking ingredients together. Set by stove so it’s ready when you need it.
- In a large pot, add water & bring to a boil (for your ramen).
- Cut onion & add to large frying pan, then let sit for 10 minutes. Prep other veggies & set aside in a bowl.
- Over medium-high heat, add a splash of water to frying pan, then water sauté onion for a couple minutes.
- Add bowl of veggies to frying pan, along with lo mein sauce. Turn heat down and simmer until veggies are cooked to your liking.
- When veggies are almost cooked, add your ramen to boiling water for 2-3 mins, then strain and run under cold water.
- Return ramen noodles to pot & pour in lo mein/veggie minute, Combine together.
- Grab a bowl and scoop out noodles + veggies (and a little extra liquid to your dish!). Sprinkle with sesame seeds & sriracha, if you fancy!
- ENJOY!!
